Rabbit in the Pastis Henri Bardouin

Ingredients

Preparation: 25 minutes  
Marinade: 12 hours 
Cooking: the 1 hour 
• 1 rabbit cut in pieces 
• 3 tomatoes 
• 2 soup spoons of olive oil 
• 1 branch of thyme 
• Salt and pepper of the mill 
For the marinade:
• 3 soup spoons of olive oil 
• 2 soup spoons of Pastis HB
• 1 clove of garlic 
• 1 coffee spoon of oregano 
• Salt and pepper of the mill

Preparation

Peel and chop finely the clove of garlic. Mix it in the other ingredients of the marinade in a hollow dish, add the pieces of rabbit and move several times for the good coat them. Cover, put in the refrigerator and let marinate until the next day. 

Peel tomatoes having plunged them a few seconds into some boiling water. Cut them in districts by removing seeds.

Drain, please, the pieces of rabbit and keep the marinade. Make them gild in the frying pan, over medium heat, with the olive oil, by turning them several times to color them on all sides. Put them as one goes along in a hen, arrange tomatoes all around, add the marinade, the thyme, salt and pepper slightly. Cover and make simmer the 1 hour on very soft fire. 
Serve in a hot dish or directly in a hen of cooking.
