Melted Popsicle

Ingredients:

30 ml Rinquinquin (French peach wine aperitif)

30 ml Port

30 ml Armenian brandy

30 ml Rhubarb liqueur (homemade)

30 ml Lemon super juice

30 ml Peach purée

Homemade Rhubarb Liqueur Recipe:

First make a rhubarb syrup by blending

1 cup of chopped rhubarb and 1 cup of water.

Fine strain into a sauce pan

Pour 1 cup sugar.

Simmer on medium heat until you get your desired consistency

Pour into a glass bottle and let cool

Fill another glass bottle halfway with vodka or neutral grain spirit

Fill the rest of the way with Rhubarb Syrup

Method:

Add all ingredients into a shaker with ice

Shake vigorously for 15 seconds

Strain into a glass with ice (preferably clear ice)

Garnish with a popsicle stick
