Hopper Sour

Ingredients:
15 ml Gentiane de Lure (gentian liqueur from Distilleries et Domaines de Provence, France)
45 ml hopped gin (I used Hopped Gin by Renegade Spirits from Mittagong, Australia)
20 ml Yellow Chartreuse
20 ml pamplemousse rose (grapefruit) liqueur or pompelmocello
20 ml lemon juice
3 dashes grapefruit bitters
Egg white, aquafaba, or WonderFoam
Method:
Chill a cocktail coupe
In a Boston shaker, shake all ingredients with ice, then shake again without ice
Double strain into the chilled glass
Express grapefruit zest oils over the top of the drink
Garnish the Hopper Sour with a grapefruit zest twist
