Green Beast by Raphaël Leclercq, bartender at A Blend of Knowledge and barmanager at Frenchie Covent Garden (London)
Ingredients
25 ml Henri Bardouin pastis
25 ml fresh lime juice
25 ml simple homemade syrup
50 ml still water
Preparation
Shake briefly, double strain over ice in a rock glass.
Garnished with a nice long peel of cucumber. The ratio of water can be adjusted to taste.
It is a great aperitif, definitely a pre meal drink.
