Flânerie Provençale, by Régis Roig-Roux, bartender at Babel Babel in Nice
Winner of the cocktail contest organized by the Distilleries et Domaines de Provence in Nice on 10th May 2023
Ingredients :
50 ml mastic tree leaves, bay leaves and clarified lemon juice cordial
60 ml Rinquinquin
80 ml homemade clary sage and lemon peel soda
Spray of Pastis Henri Bardouin
Garnish : Pine tree resin
Glass : High ball
Method :
Rub the height of a high ball glass with half a lemon, then grate some pine tree resin on top.
In a two pieces shaker, put the cordial and the Rinquinuin, then do a throwing and pour in the glass filled to the ¾ with ice.
Top with the soda. Stir with a mixing spoon and to finish, spray a little Pastis Henri Bardouin over the glass.
