Courgettes with Pastis Henri Bardouin by Bernadette Robic

Serves 4:

Ingredients:

8 small white courgettes (zucchini)

2 white onions

5 to 6 star anise

salt and pepper

Butter

1 "good glassful" of Pastis Henri Bardouin ("when you like it, you don't count!")

 

Method:

Finely chop the onions and courgettes with a mandolin

Fry them in the fat of your choice (prefer butter as this does not "kill" the taste of the Pastis Henri Bardouin)

Put a good glassful of Pastis Henri Bardouin and flambé it

Add the star anise, salt and pepper.

Fry gently and when it starts to brown, let it cook slowly until it is tender, melting or crunchy (at least 10 minutes)
